Din-Din

So I got a wild hair up my behind the other night!  I should have been doing homework or cleaning my house, but I wanted to do something nice for my husband.  It was a special day....we are halfway through our first year of marriage!!  Mr. K had to work all day and I got out of class fairly early.  I played on Pinterest for a while and found a recipe I felt I could master.  I used this recipe as a jump-off point, but I changed things a little bit.  I couldn't tell you how much I used of all the ingredients, but here's what I used:
  • Sauce
    • Diced onion
    • Diced sweet pepper
    • Minced garlic
    • Olive oil
    • Salsa verde
    • Diced tomatoes
    • Heavy whipping cream
  • Rotini Pasta
  • 3 boneless, skinless chicken breasts
  • Rub
    • Sea salt
    • Chili pepper
    • Black pepper
    • Paprika
    • Garlic
You'll see that the ingredients are basically the same.  I mixed the sauce in a skillet on the stove-top on medium heat for about 10-15 minutes.  The pasta was cooked according to the directions on the box and the chicken was pan rubbed on both sides, pan-seared, and finished in the oven on 350 degrees for about 20 minutes.

The meal turned out so nice and it was very special to share it with my husband.  I hope to continue making dinners, because I think that a family should always join together around the dinner table.  This Pinterest thing is kinda nice.  Very easy to find new recipes and great blogs for inspiration!!
